2400g cans of whole peeled tomatoes or 1 large can
1medium onion cut into quarters
5 - 6tbspbutter
1 1/2cupsof water
1/2tspsalt
salt and pepper to taste
Instructions
In a pot melt the butter over medium heat
Add the onions and cook till they just start to soften
Add the tomatoes, water and 1/2 tsp of salt
Bring to a simmer and cook for 45 min uncovered
Stir occasionally
Take off the heat and blend the soup till smooth
Add salt and pepper to taste
Notes
When using the blender make sure to remove the centre plug of the lid and place a kitchen towel over the hole to allow steam to release. This prevents your blender from building up steam from the hot soup and making a big mess.
