Method
- In a pot melt the butter over medium heat
- Add the onions and cook till they just start to soften
- Add the tomatoes, water and 1/2 tsp of salt
- Bring to a simmer and cook for 45 min uncovered
- Stir occasionally
- Take off the heat and blend the soup till smooth
- Add salt and pepper to taste
Notes
When using the blender make sure to remove the centre plug of the lid and place a kitchen towel over the hole to allow steam to release. This prevents your blender from building up steam from the hot soup and making a big mess.
