Tomato soup

The easiest and most delicious tomato soup you will ever make!

  • Blender

Ingredients
  

  • 2 400g cans of whole peeled tomatoes or 1 large can
  • 1 medium onion cut into quarters
  • 5 - 6 tbsp butter
  • 1 1/2 cups of water
  • 1/2 tsp salt
  • salt and pepper to taste

Instructions
 

  • In a pot melt the butter over medium heat
  • Add the onions and cook till they just start to soften
  • Add the tomatoes, water and 1/2 tsp of salt
  • Bring to a simmer and cook for 45 min uncovered
  • Stir occasionally
  • Take off the heat and blend the soup till smooth
  • Add salt and pepper to taste

Notes

When using the blender make sure to remove the centre plug of the lid and place a kitchen towel over the hole to allow steam to release. This prevents your blender from building up steam from the hot soup and making a big mess.
