This is one of my favourite salads to make, it’s fresh and so so easy. It only takes a few minutes to make and the flavours only get better as it sits in the fridge. This recipe will quickly become your new favourite bean salad.
Bean Salad
Ingredients
- 1 can of mixed beans
- 1/4 bell pepper diced
- 1 small garlic clove crushed to a paste or chopped finely
- 1/2 onion diced
- 1 handful of parsley stems and leaves chopped finely
- 2 tbsp red wine vinegar
- 1 tbsp olive oil
- Salt and pepper
Instructions

Drain liquid and rinse canned mixed beans and place in a medium bowl

Add all ingredients to the bowl with the beans

Mix well

Adjust seasoning

Cover the bowl with plastic wrap and let sit in the refrigerator for at least one hour to 24 hours for best flavour
Notes
It will stay covered in your refrigerator for up to 3 days
